When Peter Reinhart was asked to be the chapter editor for bread for The New Joy of Cooking, there was no doubt as to his influence on his field. Over 15 years ago, Peter founded Brother Juniper Bakery & Cafe, known for its wonderful hearth breads and namesake books. Peter was also an instructor at the California Culinary Academy prior to moving east where he helped with the opening of the International Baking and Pastry Program at Johnson and Wales University in Charlotte, NC. Peter is currently making their curriculum the best in the nation and raising the bar nationally, serving as an advisor to The Retail Bakers Association. Among his many awards, Peter won the James Beard Foundation's Best Baking and Desserts Book of 1998 for his widely acclaimed Crust and Crumb: Master Formulas for Serious Bread Bakers. Peter's cookbook The Bread Baker's Apprentice: Mastering the Art of Extraordinary Bread won both the 2002 James Beard Foundation and IACP awards. He recently published American Pie: My Search for the Perfect Pizza.
