Natural baking guru Mani Niall has been ahead of the curve his entire career. In the early 1990s, he opened two natural bakeries in Los Angeles, down-playing the health angle but attracting eager customers nonetheless. He eventually became a honey expert, consulting for the Honey Board and writing a cookbook, Covered in Honey. He is currently the director of product development for Just Desserts, a Bay Area wholesaler of cakes, brownies and desserts. His latest cookbook, Sweet: From Agave to Turbinado Home Baking with Every Kind of Natural Sugar and Sweetener focuses on alternative sweeteners such as agave nectar, demerara, golden syrup, jaggery, muscovado, palm sugar, panela, Sucanat, superfine sugar and turbinado. Food & Wine chose Sweet as one of the top cookbooks of 2009.
