![]() Mani Niall Baker Member since 2000Natural baking guru Mani Niall has been ahead of the curve his entire career. In the early 1990s, he opened two natural bakeries in Los Angeles, down-playing the health angle but attracting happy customers nonetheless. He eventually became a honey expert, consulting for the Honey Board and writing a cookbook, Covered in Honey. Mani's expertise with natural ingredients, like agave syrup, flax meal, and tea keeps him busy on CCD consulting projects. He has recently become the director of product development for Just Desserts, the Bay Area wholesaler, and released a menu of sweet treats, including trendy cupcakes, chocolate-dipped madeleines and, everyone's favorite, brownie bites. He is also working on another cookbook on sweets. |
