Hirigoyen's gifted skills as a restaurateur came to the forefront when he and a partner opened Fringale, a modern French bistro, to national acclaim in 1991 in San Francisco. Hirigoyen's now owns the Basque-influenced Piperade and Bocadillos, a stylish Spanish tapas bar, both in San Francisco. He has been featured in Gourmet, Bon Appétit, and the New York Times. Honors include Food & Wine's "Best New Chefs in America," "Chef of the Year" by San Francisco Magazine, and most noteworthy, a James Beard Foundation Award nomination for "Best Chef, California" in 2006. He published Pinxtos: Small Plates in the Basque Tradition in 2009.
