Jean-Marc Fullsack is a classically trained French chef who, after over 30 years of experience in restaurants such as Lutèce in New York and L’Hermitage in Beverly Hills, has become a specialist in low-calorie, heart-healthy cuisine. For ten years he was the Executive Chef for Dr. Dean Ornish. He presently teaches cooking at the University of San Francisco and, as a consultant, councils doctors, dietitians, and even White House chefs.
